Two New Recipes

I finally had time this week to read some magazines and I came across these two recipes to try out. I got them both out of Southern Living, and they were a big hit with Mr. Will. Enjoy!
Sauteed Mushroom and Cheese Ravioli

1 250z. pkg frozen cheese ravioli
3 tbsp. butter
1 tbsp. olive oil
1 80z. pkg sliced mushrooms
1/4 cup finely chopped sweet onion
1/2 tsp. salt
1/2 tsp. pepper
2 tbsp. chopped fresh parsley (I used 1 tbsp. dried)
2 tbsp. grated parm cheese

1. Cook ravioli according to pkg in dutch oven; drain and keep warm. Wipe dutch oven clean.
2. Melt 2 tbsp butter with oil in dutch oven over medium high heat; add mushrooms and next 3 ingredients, and saute 8 to 10 minutes or until veggies are tender. Reduce heat to low, and stir in ravioli and remaining butter, stirring until butter is melted. Add parsley, and toss gently to combine. Sprinkle w/ cheese, and serve immediately.

Balsamic Strawberries

1 16oz. container fresh strawberries, quartered
1/4 cup sugar
4 tsp. balsamic vinegar
8 round short bread cookies
8 3oz. vanilla ice cream cups
garnishes: choc. curls, fresh basil sprigs (I didn't use either of these)

1. combine first 3 ingredients in a medium bowl; let stand 1 to 2 hours at room temp, stirring occasionally.
2. Place short bread cookies on individual plates. Remove ice cream from cups and place on cookies. (I used a butter knife to run along the sides for easy removal) Spoon strawberry mixture over ice cream. Garnish and serve immediately.
