I'm Back....Ready Set Go!

Okay, so some of you may noticed that not much was cooking in my kitchen. Will was out of town all week, and to add to that my little sister got put in the hospital. She is going to be fine, but she was in bad shape. She got a "sinus" infection last week that had some crazy symptoms. Her neck swelled up, she looked as if she had swallowed a softball...for real! So we found out that some infection had developed in one of her lymph nodes and it had died. Sounds crazy right? Well, they finally did surgery on Sunday, and she is doing great. Maybe not great, but she is much better. She is eating again, and today she actually got out of bed and walked around the hospital. She will be able to go home on Wednesday.

So, yesterday was Mothers Day. Happy Late Mothers Day to all the Mom's out there! Will and I had his parents over for a nice little cookout. I didn't really make anything special for dinner, so I am just going to share my dessert recipe from last night. I made a coconut poke cake, and it was delicious!

Coconut Poke Cake

INGREDIENTS
1 (16 ounce) package white cake mix
1 (14 ounce) can cream of coconut
1 (14 ounce) can sweetened condensed milk
1 (16 ounce) container frozen whipped topping, thawed
1 (10 ounce) package flaked coconut

DIRECTIONS
Prepare cake according to package directions. Bake in a 9x13 inch pan. Cool completely.
In a small bowl combine cream of coconut and condensed milk.
Poke holes in cake with a straw. Pour milk mixture over cake and spread with whipped topping. Sprinkle coconut over cake.

Serve chilled. Next time I make it, I am going to do it the night before. It is even better the second day....yuuuummy!
