Potluck Goodness

We are attending a potluck tonight for Will's work. We hadn't planned on going because my sisters were supposed to be here visiting. Since they could not make it last minute, we decided it would be a great opportunity for me to meet everyone. So, I had to whip something together last minute. I decided to make my mom's famous campfire beans a.k.a calico beans. Of course I had to have a sample before the party. :)

Campfire Beans

1 1/2 LB ground beef
1 onion
1 bell pepper
1 LB bacon (precooked and crumbled)
1 can ranch style beans
1 can pinto beans
1 can northern beans
1 can kidney beans
1 cup brown sugar
2 tbs vinegar
2 tbs liquid smoke
1 cup barbecue sauce

Cook ground beef in pan then add onion and bell pepper, cook until browned. Add to crock pot. Add bacon, beans (do not drain the cans), sugar, vinegar, liquid smoke, and sauce. Cook one hour on high and then cook for several hours on low.

My mom usually does does a smaller amount of beef and browns a tube of spicy sausage to add to it.

Ooooweee..When Brad sees your beans...he's gonna want some! I'm not a big bean person but I am trying to get better...I don't like being picky!! I will definitely put this on my list to try. Thanks for sharing the recipe!
