Howdy Partners!

Where to begin...

Will and I have been busy as usual. I am really looking forward to the three day weekend coming up to relax at the lake. This is the second week of school, and I love everything about it. The children are so wonderful! Poor Will, I had to give him a bio on each child on the way to Memphis last weekend. Memphis was a blast by the way. We drove up Friday after school and the headed back after church on Sunday. We went over to visit w/ Thad (Will's brother), Kerry, and our sweet niece Savannah. I really enjoyed the visit. I have a new addiction though.....Swanky's taco shop. Their burrito bowl rocked! http://swankystacoshop.com/

So, in this busy schedule I haven't been very creative in my meal planning. I finally made something that isn't on this blog. We had it for dinner on Monday night and it was really good. It was so good that we had it for leftovers the next day.

Pesto Chicken Pasta

This recipe is one of those where I just throw everything together so bare with me.

Ingredients:
1 rotisserie chicken precooked (Wal-mart always has these)
Some pesto sauce
Linguine
cherry tomatoes
walnuts (you can toast these if you have the time)

I shred the chicken (there is some leftover to use for another dinner), cut the tomatoes in half, and cook the pasta. I mix up the chicken, tomatoes, and walnuts(1/4 cup) in a saute pan w/ a couple spoonfuls of pesto over low heat. Once the pasta is done and drained, toss it in the pan w/ the other items. You can add as much pesto as you would like. Then just warm it up in the pan until the tomatoes are all nice and warmed through. This is a very easy meal and it tastes great!

Will was outside playing w/ her here. She had never experienced grass before since she grew up her first 9 weeks out in the desert. She was so funny!

The two hour trip home from Phoenix, the playing outside, and the bath totally wore both of us out. I was really asleep w/ her on the floor until around two in the morning...so worth it!
